for the love of aubergines

Recipes have indeed been lacking these few weeks, with preparations to go abroad and then the arrival in Canada but not yet a place to settle. A trip to the farmers market reminded me how much I look forward to that kitchen to call me own, because with aubergine variations like this, there is a whole lot of recipes to try out. Stay tuned, in a few weeks (fingers crossed) or perhaps months, you will see some results.

It was high time to try out one of those aubergine recipes that linger around and appear everywhere, like a sign, begging you to make it. This recipe for Aubergines & Feta with Chilli I found online a long time ago, in a Good Food cookbook early on this year and this past weekend in a vegetarian magazine my mum bought. Like I said, high time.

It’s perfect to give as a present, but beware of the time you need to invest. It took me a morning to put this together, and I had already salted the aubergines and set to drain overnight, the evening before (the recipe asks, Marieke obeys). I did half the quantities because my passion for aubergines is not shared by everyone in the household. It worked out fine, except that I did not half the amount of feta, and would reckon you’d be short on feta if you used the actual eight aubergines asked for.

jamie’s aubergine parmigiana

When I was working at a farm in Limoges, France last summer, I ate a lot of wonderful food. One for the things I remember most was the eggplant parmigiana. Planning to make it for myself for a long time, I finally got around to it a few weeks ago. The recipe I got from Jamie Oliver. I followed it pretty much to a t, except I did salt the aubergines first and I added mozzarella in between the layers. The recipe can be found here. So I won’t copy the recipe here, but instead I’ll share some pictures of the process (which my mum took as I was making the dish).

As a frequent user and big time fan of aubergines, it’s important to have a side dish in my repertoire to whip out at any dinner party. While I was working on a farm in Italy I learned this recipe from the chef there. It’s simple, yet tasty beyond belief. It slightly resembles a dish I made a few weeks earlier when I threw a Greek dinner party for my friends from the seaturtle program. It has a few more ingredients on there, but is similar.

Italian griddled aubergines

two aubergines
a lemon
olive oil
finely chopped garlic

Slice the aubergines sideways, about one centimeter thick and salt them on both sides. Leave them standing like that for about half an hour. It takes out the water and some bitterness. In the meantime add the finely chopped garlic to about 1/4 cup of olive oil. Now back to the aubergines; rinse the salt off. Heat up the griddle pan, nice and hot and griddle the aubergine slices until they are slightly charred on both sides. Lay the finished ones on a plate, slightly overlapping each other. When you have finished, brush on the lemon juice and then drizzle over the oil/garlic combination. Ready to serve.
